I find it interesting that I'm posting about an award dealing with chickens since Steve & Pippin stole FROZEN chicken that was sitting out to thaw. Anyway . . .

Worst part of the weekend: Needing help from my Mary and knowing she's not here.

Best part of the weekend: Having a three-day weekend of rest and hanging out with friends.

Most random part of the weekend: The Easter Bunny left some candy on our doorstep! (Thanks Easter Bunny, aka Mom!)

People I saw this weekend: Todd, Jamie & Sarah (and her fam), Shannon & Doug (and their cute kids)

Something I wished I did this weekend that I didn't get around to doing: Going to the grocery store, although I won't go until Todd adds his stuff to the list and gives me some menu ideas.

Things that I am looking forward to this week: Just making it to Friday.

Things that I am not looking forward to this week: lots of TAKS tutoring, dealing with ridiculous discipline issues with a few of my students

What'd you do this weekend?

Mexican Wontons

I have enjoyed these at parties in the past, but a friend just recently gave me the recipe. This easy recipe made plenty, and I have eaten plenty!

Mexican Wontons

1 package wonton wrappers
1 lb. Jimmy Dean Sausage
2 cups cheddar cheese
1½ tsp. chopped olives
¼ cup chopped bell pepper
1 package Hidden Valley Ranch dip mix
sour cream for ranch dip mix

* You will need a mini-muffin pan

Preheat oven to 350 degrees. Make ranch dip mix first since it needs to refrigerate for a while. Cook sausage in a pan. Mix all ingredients in a bowl. Place wonton wrappers in the min-muffin pan. Cook in oven for 5 to 10 minutes until they are a little brown. Spoon mixture into wonton wrapper, and bake again for about 10 minutes.

Weekend Wrap-Up

Worst part of the weekend: Seeing my grandmother's obituary in the newspaper.

Best part of the weekend: Doing absolutely nothing on Sunday. Joyce having her twin boys was a close second, of course.

Most random part of the weekend: Spending six hours at a friend's house drinking beer vs. the two hours and one beer I had planned!

People I saw this weekend: Todd (duh), my friends Katie, Shannon & Greg, and my cousin Jennifer & her boyfriend Jerrod

Something I wished I did this weekend that I didn't get around to doing: Cleaning house.

Things that I am looking forward to this week: Bunco tomorrow, maid coming & hair appointment on Wednesday, and especially Friday - no school!

Things that I am not looking forward to this week: continuing to prepare my students for TAKS (such a beating), trying to get some things done around the house

This a beautiful poem that a friend sent me this past week. I wanted to share it with all of you because, while I think it sounds as if Mary is speaking to me, I think you may hear loved ones you've lost speaking to you as well.


Tomorrow Starts without Me

If tomorrow starts without me,
And I'm not there to see,

All filled with tears for me;

Friday Fill-Ins

1. Angel or not, I will make it through the day without maiming any of my students.

2. You can't have me any way you want me. (What you see is what you get.)

3. As my mother used to say, you're full of great ideas!

4. There is lots of heavy breathing and cold water drinking after I'm done working out or doing something strenuous.

5. Even in the most crowded of rooms some people feel lonely.

7. And as for the weekend, tonight I'm looking forward to getting out of school before 7pm tomorrow my plans include being held hostage waiting for furniture repair people, nails and dinner with cousins and Sunday, I want to sleep & be LEFT ALONE!
